Tangy spicy eggplant dry

The summers are here and colorful vegetable carts passing by your house are no more colorful as winters… Limited summer veggies brings a question what to cook, same happened today morning when I found some eggplants in my refrigerator… Normal alu baigan ki sabzi would be so boring so decided to play with the ingredients and it came out to be a tasty dish, so thought of sharing it with all… Let’s start…


Small eggplants 1/2 kg cut into squares, Onion 1 medium size chopped, Tomato 1 medium size chopped, garlic 6 to 8 pods chopped, ginger chopped, green chillies 2to 3 slit into two, curry leaves 8 to 10, Cumin seeds 1/2tsp, mustard seeds 1/2 tsp, Turmeric powder 1/2tsp, chilly powder 1/2tsp, coriander powder 1/2tsp, garam masala 1/2tsp, oil 2tbsp, salt to taste, lemon juice 1/2 of half cut lemon and coriander leaves to garnish.

Cut and soak eggplants in salt water for 10 mins. In a pan heat oil, add Cumin n mustard seed let it crackle, add curry leaves into it and chopped garlic and ginger fry it, add onions n fry it until golden brown now add chopped tomatoes mix it properly. Add Turmeric powder, chilly powder and coriander powder into it and stir it properly, let tomatoes cook, add cut eggplants into pan add salt to it and mix the masala properly with the eggplant, add garam masala mix it and close the lid of the pan. Let it cook, keep stirring occasionally. Switch off the flame once the eggplants are cooked. Now add lemon juice to it mix it and garnish it with coriander leaves.
