Boiled potatoes 6 to 8 medium sized, tomatoes 2 medium sized blended, 2 green chillies chopped, garlic ginger paste 1tsp, mustard seeds 1tsp, curry leaves, besan 2 tbsp, red chilli powder 1/2tsp, turmeric powder 1 tsp, coriander powder 1 tsp, cumin powder 1/2tsp, oil 2tbsp, salt to taste, garam masala 1/4tsp, ghee 1 tbsp, chopped coriander leaves.
In a pan heat oil add mustard seeds n add 2tbsp of besan and fry it add ginger garlic paste to it and stir add blended tomatoes to it n let it cook add turmeric powder, coriander powder, red chilli powder, cumin powder and chopped green chillies to it and stir. Add boiled potatoes and salt to taste and mix it well.. If its to dry add a cup of water to it and mix, let it cook for 5 mins. Punjabi aloo tamatar ki sabji is ready garnish it by sprinkling some garam masala powder, coriander leaves and a spoon of desi ghee to it and serve it hot with pooris.
